How to set up all of your subscriptions to start renewing on a certain date?

You should be able to achieve this with the "Fixed Schedules", where you can set exact billing dates for your subscription renewals. This feature should be found by going to: Seal Subscriptions > Subscription Rules > Fixed Schedules.
